Vineyard
On the right bank of the Serein, the Mont de Milieu is so named because it separated the dukedoms of the Burgundy and the Champagne region in the past. This famous Premier Cru benefits from a similar location of its Grand Cru neighbors with its Southeast facing position. This exposure guarantees the Mont de Milieu a higher average temperature and longer hours of sunshine with a certainty of quality.
Tasting notes
This is a mineral and complex wine of a high-quality level, it is dry, firm and complex with exotic fruits aromas. The mouth is round with a buttered note and a beautiful minerality on the finish. Made from vines with an average age of 35 years and aged in stainless steel tanks for 12 months on the lees. Drink with seafood, grilled fish and white meats in sauces.
Estate
Founded in 1840, Maison Simonnet-Febvre is a traditional Chablis winery and amongst the oldest in the area. Nowadays Simonnet-Febvre produces a wide range of wines expressing the different terroirs of the Chablis and Grand Auxerrois vineyards. The estate’s style is asserted with the same conviction throughout the whole range of wines, from the famous Saint-Bris to their outstanding Chablis Grand Cru Les Clos.
They also carry out the historical legacy of being the only winery in Chablis to produce a range of Crémants de Bourgogne. Owning 15 hectares of vineyards in the Auxois area which is halfway between Chablis and Beaune. Bought by Maison Louis Latour in 2003, the estate is led by Paul Espitalié who managed to inspire a new dynamic while keeping its independence by running it as a separate enterprise with its own house style.
Appellation
Chablis (“Shah-blee”) is a Chardonnay making wine region in the northwest corner of Burgundy, France. Unlike other Chardonnay wines, Chablis rarely uses oak-aging, resulting in a very different style and taste profile. It’s because of Chablis’ renown, that the unoaked Chardonnay style is popular worldwide. Wines from Chablis are frequently described as having citrus and white flower aromas with dry, lean, light-bodied flavors of citrus, pear, minerality and salinity. Chablis rarely displays flavors of butter – an indication of oak-aging. In fact, one of the most desirable traits in quality Chablis is a long, tingly finish of high acidity and flint-like minerality. Much of the lean and elegant taste of Chardonnay from Chablis is attributed to the qualities of the soil, climate, and traditions of the region. The region of Chablis is semi-continental which means growing high quality grapes is very challenging. Chablis does have idyllic hot summers, but poor weather in the spring or fall is what wreaks havoc on a vintage. This is very common in Chablis. For example, spring frosts may kill the vines, and rain in the fall will stop grapes from fully ripening.
